What\'s in Season? Beans!

Beans are one of the more humble of vegetables - on the table, that is. But if you can find a bean pole and turn your children loose next to it, you may find out just how exciting the hunt for this nutritious little pod can be.
If you can get any home, serve them raw with dip, or try steaming them in a bit of water, then tossing them while still warm in a vinaigrette of olive oil, garlic, salt and vinegar.

For a splash of color, grate half a raw beet and toss with the beans just before serving. Your body will thank you; beans are an excellent source of vitamin C, vitamin K and manganese. They are high in fiber, and considered a tool in the fight against colon cancer. Eat your beans!
