Recipe: Quesadillas

Children often prefer these "Mexican grilled cheese sandwiches" cooked as plainly and simply as possible. But they are also delicious with chopped sweet onion, shredded cooked chicken, chopped cilantro or tomatoes, or sliced jalapeños.


  • flour tortillas, whole wheat if possible

  • cheddar or Monterey Jack cheese, grated

  • sour cream, if desired

  • oil for pan

Preparation: 1. Heat a skillet, and add a small amount of oil. 2. When it is hot, but not smoking, lay a tortilla in the pan. 3. Sprinkle with grated cheese and top with another tortilla. 4. When the bottom tortilla is flecked with brown heat spots, flip it and let the other side cook. 5. When both tortillas are warm and flecked with brown and the cheese is melted, move to a serving plate. 6. Slice into six or eight triangles and serve.
