Health Check: The Rainbow Connection

This garlic-y, limey version of the old favorite can be made in a mortar and pestle or in a food processor. Prepare immediately before serving.


  • 1 clove garlic

  • 1 tsp. coarse sea salt

  • 1/2 lime

  • 1 avocado


  1. Smash the garlic and salt in the mortar, or mince in a food processor. Add the lime juice and let sit while you prepare the avocado.

  2. Cut the avocado in half lengthwise. Twist the two halves until they separate. Remove the pit. With a small paring knife, cut a crosshatch into the avocado flesh, going right up to the inside of the skin, but not piercing it. Use a large spoon to scoop out the avocado and add it to the garlic mixture.

  3. Blend or smash until smooth, but not overly blended.

  4. Add more salt if desired.
