This garlic-y, limey version of the old favorite can be made in a mortar and pestle or in a food processor. Prepare immediately before serving.
- 1 clove garlic
- 1 tsp. coarse sea salt
- 1/2 lime
- 1 avocado
- Smash the garlic and salt in the mortar, or mince in a food processor. Add the lime juice and let sit while you prepare the avocado.
- Cut the avocado in half lengthwise. Twist the two halves until they separate. Remove the pit. With a small paring knife, cut a crosshatch into the avocado flesh, going right up to the inside of the skin, but not piercing it. Use a large spoon to scoop out the avocado and add it to the garlic mixture.
- Blend or smash until smooth, but not overly blended.
- Add more salt if desired.
