Making a pie crust from scratch can be a bit much, especially if you've just been picking blueberries all afternoon. Save yourself the trouble and buy a frozen pie crust, whole wheat or regular. (Make sure to check the ingredients for hydrogenated oils.) Then, just mix up your berry filling, and you're good to go.


  • 1-1/4 cup sugar

  • 1/3 cup all-purpose flour

  • 1/4 tsp. salt

  • 2 Tbsp. lemon juice

  • 2 tsp. grated lemon zest

  • 5 cups fresh blueberries, rinsed with stems removed


1. Combine sugar, flour, salt, lemon juice and lemon zest, and the blueberries. Pour the mixture into the frozen pie crust.

2. Place the pie on a cookie sheet and bake at 425 for about 35 minutes, until crust is browned and blueberries are bubbling.
