Cooking for kids is always challenging, but what about cooking with kids?
Annabel Karmel (author of First Foods) has a new book out that encourages parents to open up the apron strings for their kids. The Toddler Cookbook features recipes like Lettuce Boats (lettuce leaves filled with chicken or tuna salad), Easy Cheese Bread Rolls and Homemade Lemonade. Peanut Butter Bears, a more healthful version of Rice Krispie Treats, were a hit in our house. Peanut butter is better than marshmallows, but the crunchy pleasure of the rice cereal is still there.
Peanut Butter Bears

- 1-1/3 cups puffed-rice cereal
- 1/3 cup confectioners' sugar
- 2 Tbs. sesame seeds
- 1/3 cup smooth peanut butter
- 3 Tbs. unsalted butter
- 16 chocolate buttons
- mini colored candies
- black icing for writing
