This simple side dish can be served with any number of poultry, meat or fish dishes. And leftovers can be reheated for classic hash browns in the morning.
Baking potatoes, about one per person
- 1 - 3 Tbs. olive oil
- 3 - 4 garlic cloves, peeled
- Salt, to taste
- Dice the potatoes, and place in a baking dish, along with the garlic cloves. The more thinly spread the potatoes are, the crispier they will be, so take your family's tastes into account when you choose the dish.
- Toss with the olive oil, sprinkle with salt, and bake with the chicken, at 425 degrees, for about 25 to 30 minutes, checking occasionally.
